Cervaro della Sala is produced from grapes from the vineyards of "Castello della Sala", altitude between 200 and 400 meters, soil rich in marine fossils and infiltration of clay.
Brief contact with the skins (8 hours at a temperature of 10 ° C), barriques fermentation, stop in barriques for 5 months aging in the bottle for 10 months.
The bouquet is intense, complex, a nice fruity, pineapple, pear and citrus fruit, yellow flowers, sweet vainigliate.
The taste presents great structure, balance and persistence; denotes a varietal characteristic and uniqueness of the territory.

The Castello della Sala is an Antinori's family property and it's exended on 500 hectares. It is a beautiful medieval fortress on the italian apennines (Umbria side) bordering Tuscany. The castle stands on a tufaceous promontory surrounded by ancient Etruscan hill towns at 200-400 metres above sea level. The vineyards of the Castello della Sala estate cover an area of 160 hectares on a clay soil and rich in fossils of Pliocene period with sedimentary and volcanic origin. "Castello della Sala" Vineyards were originally planted with traditional grapes mixed, mainly Procanico and Grechetto, while today there are also several clones of chardonnay, pinot nero, sauvignon blanc, and so on.. The wines of Castello della Sala are aged in French oak barrels in the cellars 30 meters below medieval castle that dates back to fourteenth century.Tuscany is famous for its red wines, so when the Marquis Nicholas (father of current president Piero Antinori) decided to produce white wines, turned his attention to Umbria acquiring "Castello della Sala". In particular we remember the "Muffato della sala", a sweet wine well structured and balanced with persistent and unique taste, a very typical product and one of the few cases in Italy of sweet wine from bodrytis cinerea.
